1 1/2 courgettes

handful of grape tomatos

Sauce:
2tbs olive oil
1tbs lemon
salt + pepper
COUS COUS:
150g of raw cous cous
Vegetable stock
1/2 bell pepper
1/2 courgette
1/2 aubergine
garlic
1/2 red onion
salt + pepper
CHICKEN BREAST:
2 chicken breasts
2 Tsp apple cider vinegar
1/2 tsp salt
1/4 tsp black pepper
1 tsp dried oregano
1 tsp dried basil
1 tsp smoked paprika
1/8 tsp chilli flakes
1 Tsp rosemary
1 dash cayenne pepper
MUSHROOM PASTA
1/2 Red onion
3 garlic cloves
Veg stock
180g Mushrooms
80g pasta
100g Cashews
500ml light soy milk
Lemon juce
Salt 1tsp
2 tbsp nutritional yeast
TOFU RIBS:
1 firm block tofu/ Tempeh
2 tbsp soya sauce
2 tbsp maple syrup
1 tbsp tomato paste
Nandos hot sauce
2 tbsp water
