Looking for a quick and healthy side dish or a simple yet special holiday recipe?  Try this  4 ingredient red skin mashed potato recipe.  These potatoes offer the benefit of keeping the skin on the potatoes which adds more fibre to your meal. Plus, you save time not peeling them!  

 

Makes 4 servings 

 

What you need:

 

2 pounds Red potatoes (approximately 6 medium potatoes) 

2 tbsp butter 

1/4 cup sour cream  

1/4 cup 1% milk (or whatever milk you have at home) 

Salt and pepper to taste 

 

How you make Red Skin Mashed Potatoes with Sour Cream

 

Place potatoes in a pot and cover with water.  Bring the potatoes to a boil uncovered until they are soft when pierced with a fork (approximately 10-15 minutes). 

 

Drain the potatoes and mash by hand with the remaining ingredients. You can also use a hand or stand mixer for easy mixing – just work slowly so you don’t over mash them.
