Simple, crowd-pleasing breakfast recipe

If you’re preparing breakfast for a crowd, or if you want to prepare breakfast for a few days in advance, you have to try these cheesy baked eggs! No need to stand over a skillet and carefully watch these eggs, and you can easily adjust the recipe to the number of people you are serving. Pop them in the oven and take a few minutes to prepare a fresh fruit or green salad to accompany them.

What You Need

12 Eggs, beaten
1 TBS Butter, melted
1 lb Pepperjack cheese, shredded (or your favourite cheese)
1 16 oz container cottage cheese, 2%
1/2 cup all purpose flour
1 tsp salt

 

How You Make Cheesy Baked Eggs

  1. Brush a 9 x 13 baking pan with melted butter
  2. Whisk together eggs, pepperjack cheese, cottage cheese, flour & salt in a large bowl
  3. Pour egg mixture into greased baking dish.
  4. Bake at 350 F for 50 – 60 minutes or until set.

 

You can easily halve this recipe and bake it in an 8×8 or 9×8 square tin, or even a pie tin to serve in wedges. Adjust baking time to 30 – 40 minutes if you make a smaller batch.

 

TIP: Try blending the eggs and cottage cheese together! When baked your eggs will have a silky, custardy texture, similar to a sous-vide egg.
